Healthy Pumpkin Chocolate Chip Cookie Bars

Notes: 

Makes 9-12 bars, depending on how large you cut them

Ingredients: 

1 cup old-fashioned rolled oats
1 can cannellini white kidney beans, drained and rinsed well
1 cup plain pumpkin puree (not pumpkin pie mix)

1/2 cup sucanat or organic sugar
3 tablespoons coconut oil or oil of choice
1 teaspoon pure vanilla extract
1 tablespoon pumpkin pie spice mix
1/2 teaspoon salt
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 cup chocolate chips (I use Enjoy Life mini chocolate chips)
