2 Pounds Pie Pumpkin (sees removed, peeled and chopped into 1 – 2 inch pieces)
2 Pounds Cauliflower (roughly chopped)
4 Tablespoons Olive Oil
6 Cups Vegetable Stock
1 Cup Apple Juice
1 1/2″ Piece Fresh Ginger (peeled and grated)
2 Teaspoons Curry Powder
Sea Salt
Freshly Ground Black Pepper
