4 egg yolks
2 tbsp lemon juice (small lemon)
Tbsp cold water
Salt
Cayenne or drop of tobasco sauce
Combine egg yolks & water
Whisk till light & foamy add a couple of drops of lemon while whisking
Whisk over double boiler until slightly thickened
Remove from heat and whisk in butter slowly to start
Whisk in lemon once thick & season.
