Homemade Autume Bread

Ingredients: 

2 cups granulated sugar
1 cup canola oil
3 large eggs
2 teaspoons vanilla
1 teaspoon ground cinnamon
1 teaspoon kosher salt
1 teaspoon baking soda
1/2 teaspoon baking powder
2 cups all-purpose flour
1 cup whole wheat flour
1 cup grated zuchini
1/2 cup grated carrot
1/2 cup mashed banana
3/4 cups walnuts


  1. Preheat oven to 375 degrees F.
  2. Coat 2 9X5 loaf pans with nonstick spray.
  3. Cut strips of parchment paper to fill the bottoms and up the sides of the pans. Allow the parchement to hand over the edges of the pans for easy removal of the cake.
  4. Spray the pans again. Set aside.
  5. In a large bowl, stir together the sugar, oil, eggs, vanilla, cinnamon, salt, baking soda, and baking powder until smooth.
  6. Stir in both flours until combined.
  7. Stir in zuchinni, carrots, bananas, and walnuts until combined.
  8. Divid the batter between the two pans.
  9. Bake 50 to 60 minutes or until a toothpick inserted in the center comes out clean.
  10. Allow to cool in the pan for at least 5 to 10 minutes.
  11. Using the parchment paper, lift out the pans to cool completely.
  12. Serve warm or at room temperature.
