Homemade Graham Crackers

Ingredients: 

1 cup (5 ounces) all-purpose flour
3/4 cup (4 1/2 ounces) whole-wheat flour
1/2 cup (1 3/4 ounces) rye flour, plus additional for the counter
1/2 teaspoon salt
1/4 teaspoon baking soda
1/2 teaspoon baking powder
1 1/2 teaspoons cinnamon
1/4 cup (2 ounces) packed dark brown sugar
3 tablespoons cold unsalted butter, cut into 1-inch cubes
4 tablespoons non-hydrogenated vegetable shortening (I use Earth Balance), cut into 1-inch cubes
4 tablespoons honey
2 teaspoons vanilla extract
1 teaspoon granulated sugar
