Ingredients:

Potatoes (as many as you like). Rusett work best - something fairly large.
Salt to taste
Any other herbs/spices you like (onion powder, dried herbs, etc.)

1. Gather as many potatoes as you need to make the amount of fries desired. Wash thoroughly. Peel if desired.

2. Cut potatoes into french fry shape. This works best if you first cut the potato in half lengthwise, then cut a wedge from either end of the new half, then cut sticks out of the remaining potato half, then cut those into even skinnier sticks. Cut as thin as you desire, but not too thin.

3. Once potatoes are cut, spread on cutting board or plate. Apply a generous coating of salt, to drain the moisture out of the potato. Leave potatoes for 10-15 minutes.

4. While potatoes are drying, preheat a large pan on the stove over medium-high heat. Also, pre-heat oven for 400-415 degrees.

5. After 10-15 minutes of potato drying, dry potatoes even more with a large paper towel. Transfer to pan and add just enough oil to coat bottom of pan. Heat fries over medium to medium-low heat until they start to turn clear and get a slight brown coating, turning occasionally.

6. After potatoes have been slightly fried in oil, add any herbs or other flavorings and transfer to large cookie sheet in an even layer. Put cookie sheet in oven.

7. Cook french fries until slightly golden brown and soft inside. Poke with a fork to test doneness. This will take approximately 30-35 minutes in a 410 degree oven. You can also lower the heat and cook longer, if you want to make sure they are fluffy.
