Ingredients: 

Dough:
•2 cups unbleached all-purpose flour (recommended: King Arthur brand)
•1/2 teaspoon salt
•1 large egg
•1/2 cup sour cream
•1/4 cup butter, room temperature

Filling:
•1 cup warm mashed potato
•1 cup sharp cheddar cheese, shredded

To Finish:
•1/4 cup butter
•2 large shallots, diced; OR one medium onion, thinly sliced
