Non-boring breakfasts

Ingredients: 

3/4 cup unsweetened vanilla almond milk
1/4 cup multigrain hot cereal
1/4 cup shredded carrot
2 Tbsp chopped dried apricot
1 tsp. orange zest
1/4 tsp. ground cinnamon
Pinch ground nutmeg
Orange slices, chopped toasted almonds, and honey


In a small saucepan combine almond milk, cereal, carrot, apricot, orange zest, cinnamon, nutmeg, and a pinch of salt.  Bring to boiling.  Stir and cover; reduce heat to low.  Cook 8 minutes, stirring occasionally.  Top with orange slices, almonds, and honey.  Makes 1 serving.
