Ingredients: 

500g cooking apples
75g caster sugar
Grated zest and juice of 1 lemon
1 large egg white
150ml double cream

For the shortbread (makes 15-20 biscuits)
100g walnuts
100g soft unsalted butter
50g caster sugar
100g plain flour
ΒΌ tsp salt
A little demerara sugar
