2 t baking powder
1/2 t baking soda
1 1/2 t onion powder
1 t salt
2 T sugar
Pinch of black pepper
1/2 cup non-dairy unsweetened milk
1 t apple cider vinegar
1 T canola oil
1/4 cup unsweetened applesauce
1/3 cup non-dairy cream cheese
Pepper jelly for serving
Preheat oven to 400 and grease a mini-muffin tin with Pam
Combine dry ingredients in large bowl
Combine wet ingredients in small bowl
Add wet to dry and stir until just combined
Spoon batter into muffin tin, filling each one full
Scoop 1/2 t cream cheese into center of each muffin and cover the cheese with the batter
Bake 9 min until crisp on top
Serve with pepper jelly
