Italian Wheat Pie

Ingredients: 

For the filling:
12 ounce ricotta
12 ounce butter
2 eggs and 2 yokes
1 lemon, grated peel
8 ounces wheat germ
1 tablespoon butter
2 ounces each of candied fruit and orange peel
1 teaspoon orange water
4 ounces milk
1 teaspoon vanilla
For the crust:
8 to 10 ounces flour
2 eggs
4 ounces sugar
4 ounces butter


  1. Preheat oven to 375 degrees F.
  2. When making the crust, mix flour and butter with salt and sugar.
  3. Mix with eggs and vanilla and work on it for 5 to 10 minutes.
  4. Place the crust mixture in the refridgerator for 1 hour.
  5. For the filling, cook the wheat then add the lemon peel and butter in a saucepan. Cool.
  6. Beat the eggs and ricotta with sugar, orange water, and vanilla.
  7. Then, add the wheat and candied fruit.
  8. Place the dough in a 9 inch pie baking dish.
  9. Pour the wheat mixture into the uncooked crust.
  10. Bake for 1 hour.
