Jerk Pork – Rice n Beans


2 plates:
4 huge pork chops beaten flat a little
Kidney beans

For the Jerk sauce/marinade
1 red onion diced
4 cloves garlic chopped
2 tps minced ginger
2 tps dried thyme
1 scotch bonnet chopped
1 tbs honey
1 tbs dark rum
Juice of 1/2 lemon
1 tps Maldon salt
1 tps black pepper corns
Get all of this wazzed up in a blitzer or in a Mortar if you’re a REAL man (or woman!)
