Khutabi

Ingredients: 

dough:
1 egg
1/4 cup water
1.5 cups flour
1/2 teaspoon salt

filling:
7 oz fruit layers plum or sour cherry
.3 lbs fresh ground lamb
1/4 average sized onion (small)
black pepper + salt
1/6 cup water

topping:
sumac to taste
cinnamon to taste


meat:
mix meat with onion, pepper, salt - add some water

dough:
beat egg with salt
mix in water and flour
let rise for 40 minutes
cut up into 6 parts
roll each part into 2-3 millimeter thick slabs (one at a time)

prep:
on each slab, put 1/6 of meat plus some fruit layers
place thin strip of butter inside, fry butterside up first.
double close each khutab
fry on medium heat
cover with sumac and cinnamon once ready
eat.
