Korean Cauliflower Fried "Rice" Bowl

Ingredients: 

4 garlic cloves, finely chopped
1/2 cup tamari or Bragg's Liquid Aminos
2 tablespoons rice wine vinegar
1/4 cup toasted sesame oil
2 cups grated cauliflower (about half a head)
2 carrots, grated or very thinly sliced
1 cup frozen spinach or 2 large handfuls fresh
2 eggs
1/2 pound sirloin or flank steak, thinly sliced (can be optional for vegetarians, just add more mushrooms)
3 fresh shiitake mushroom, sliced
sesame, coconut, or olive oil for frying

Optional garnishes:
1 sheet dried seaweed (nori), cut into thin strips
1 tablespoon sesame seeds, lightly toasted
3 scallions, chopped
