Kutia
2 c Quick Barley and/or Parboiled Wheat Berries
4 c Water
1 t Salt
Compote
2 lb Dried Fruits (Cherry, Apple, Prune, Raisin, Apricot, Blueberry, etc.)
8 c Water
1 Cinnamon Stick
1 Star Anise Pod
Kutia
Cook the barley and/or wheat berries according to the package directions. They may have to be drained of excess water when they finish cooking. Cool and refrigerate.
Compote
Cut the fruit into ½” chunks and add to a stock pot. Cover with water and add cinnamon stick and anise pod. Bring to a boil. Allow fruit to simmer for 45 minutes or so, until fruit is plump and water is colored and thickens slightly. Cool and refrigerate.
To serve, spoon some of the kutia into a small bowl and ladle compote over the kutia. Honey and/or cinnamon can be added as well.
