This was a staple in our house when I was growing up and is essentially my Ma’s recipe, but I’ve replaced the bought curry powder for my own. I highly recommend making your own paste as it out strips anything you can buy in a packet and you can regulate the constitute parts as you feel like ie ie more coriander, less ginger etc, etc.
Chicken left overs, both dark and white meat preferably pulled apart.
For the spice paste:
1/2 red onion chopped
4 cloves of garlic chopped
whole black pepper corns – 5-6
1 tps Maldron salt
1 tps Turmeric
1 tps Coriander seeds
1 tps Cumin seeds
1 Tps chili powder (or a whole fresh one if you have it)
Olive oil
2 squirts of tomato puree
Additional
500mls Chicken stock
Peas and courgette – optional
2 TBS mango chutney
