2 1/4 cup graham cracker crumbs
1/3 cup butter, melted
1 package (8 ounces) light cream cheese, softened
1/2 container 1% cottage cheese
3/4 cup light brown sugar, firmly packed
3/4 cup chocolate chips
2 eggs
1 cup milk
3 tbsp cornstarch
2 tsp vanilla extract
Preheat oven to 350 degrees F.
Line a 13x9 inch pan with foil leaving 2" overhang at each end.
In a medium bowl, mix white sugar, butter and cracker crumbs and stir until well combined.
Press gentley into bottom of prepared pan.
Bake for about 8-10 minutes.
Meanwhile, in another bowl, beat cream cheese, cottage cheese and brown sugar together until smooth.
Beat eggs one at a time, and then the milk, cornstarch and vanilla.
Fold in 1/2 cup chocolate chips.
Pour mixture over the baked crust.
Bake (still at 350 degrees) for 25 minutes, or until set.
Immediately sprinkle remaining chocolate chips on top.
Let cool.
Refridgerate at least 2 hours.
Remove from pan using foil overhang as handles.
