Ingredients: 

1 16-ounce jar of salsa (pick your favorite—red, green, black bean and corn, whatever you like best)
4 large eggs
3 cups baked tortilla chips, whole grain tortilla chips, black bean tortilla chips, or your favorite brand
1/2 cup finely shredded Mexican cheese blend
OPTIONAL TOPPINGS
2-3 scallions, thinly sliced
1 large avocado, diced
1/2 cup sour cream or plain Greek yogurt (any fat percentage)
1 large lime, cut into 4 wedges
