60g/2oz dairy-free margarine – I recommend Pure Sunflower Spread
60g/2oz vegetable shortening
½ tsp Xanthan Gum
2 tbsp lemon juice
The zest of 1 lemon
For the lemon curd
The juice and zest of 1 lemon
1 ½ tsp cornflour
85g golden caster sugar
70g dairy free margarine
