Low Fructose Macadamia Brownie

Ingredients: 

1 cup almond meal
3 tablespoons rice malt syrup
Pinch salt
125gm butter
2 eggs
50gm 80% dark chocolate (Lindt)
1/2 teaspoon bi carb soda
1 teaspoon vanilla essence
1/2 teaspoon dextrose
1 cup chopped macadamia nuts


Heat oven to 150 deg Celsius

Put chocolate, butter and rice malt syrup in a microwave proof bowl and microwave for 1 minute stirring at the 30 second mark. Careful not to burn the chocolate.

After the mixture is melted mix through the rest of the ingredients and pour into a lined square baking tin. Cook for 10 to 15 minutes. The brownie is cooked when touched lightly and it springs back.
