I found this recipe many years ago. It is made with pudding mix. Very soft chewy cookie is a result.

Ingredients: 

1/2 C BUTTER (SOFTENED NOT MELTED)
1/2 C SUGAR (WHITE OR BROWN)
1 SM PKG INSTANT PUDDING (ANY FLAVOR) *I LIKE VANILLA OR CHOCOLATE
1 EGG
1 1/4 C SR FLOUR

 

  1. CREAM BUTTER, SUGAR AND PUDDING MIX.
  2. BEAT IN EGG.
  3. STIR FLOUR INTO CREAMED BATTER.
  4. SHAPE INTO BALLS THE SIZE OF WALNUTS.
  5. PLACE ON UNGREASED COOKIE SHEET.
  6. FLATTEN WITH FORK OR SUGAR COATED GLASS BOTTOM.
  7. BAKE 10-12 MINUTES AT 350
