Madhur Jaffrey’s lamb bhuna, or bhuna gosht

Ingredients: 

2 lbs Boneless Lamb or Mutton Shoulder (cut into large chunks)
2 tsp Cumin Seeds
4 tsp Coriander Seeds
2 tsp Mustard Seeds
2/3 Dried Red Chillis
2 tsp Fennel Seeds
2 tsp Fenugreek Seeds
3 Large Shallots (finely chopped)
4 cm piece Fresh Ginger (finely chopped)
5/6 Garlic Cloves (finely chopped)
2 Medium Tomatoes (peeled and chopped) or use canned
15 Curry Leaves
1 1/2 tsp salt
250 ml water
sprinkle of Garam Masala
handful of chopped Fresh Coriander to serve
