3 small pearl onions, peeled and chopped
1 inch piece of ginger, roughly chopped
5 cloves of garlic, peeled
3 thai red chillies
1 teaspoon of turmeric powder
5-6 kaffir lime leaves or basil leave
1 root of lemon grass, chopped
Method for the Malaysian Curry Paste
Combine all ingredients in a food processor and blend to make a smooth paste. The paste will not be super fine, but coarse due to the fibres in the lemon grass.
Ingredients for the Malaysian Vegetable Curry
1 large potatoes, boiled, peeled and diced
1 carrot, diced and steamed
4 to 5 baby corn, diced and steamed
10 broccoli florets, steamed
2 spring onions, finely chopped with the leaves
200 ml coconut milk
4 to 5 curry leaves
oil for cooking
