Manicotti

Ingredients: 

Filling
1 3lb container of ricotta
1/2 lb grated mozzerella cheese
1-2 eggs
salt
pepper
parsley

Shells
5 eggs
1 1/2 cup flour
3/4 cup water
salt
pepper


  1. Mix well with a wisk or electric beater (must be thin)
  2. Use a 6 in. non-stick pan over medium heat, spray with pam, pour in the batter off of the flame and swirl around the pan, then place over the flame until the crepe begins to brown and pull away from the sides.
  3. Place on a paper towel to cool off.
  4. Fill the crepes with the filling and place in a pan with a little gravy on the bottom.  Then pour more gravy over the top and bake covered with foil x's 25 minutes @ 350.
