4 ounces Spinach and Rocket salad mix
1 Red onion, thinly sliced
1/2 cup Walnuts
21 ounces Chicken Breast fillets
28 ounces Butternut Pumpkin, peeled and chopped
2 teaspoons olive oil cooking spray
2 tablespoons Apple cider vinegar
2 tablespoons Olive oil
2 teaspoons Maple Syrup
1 teaspoon Wholegrain mustard
