Mashed Cauliflower


1 Organic large Cauliflower
2 tbsp organic butter/Ghee
1/3 cup Organic coconut milk
1/2 tsp sea salt

Optional- 1 shallot

Break up cauliflower into florets. Place in a pot to steam. Bring water to a boil and reduce heat slightly. Steam until soft. Transfer to a large blender. Add butter,coconut milk and sea salt. Blend until smooth. You may need to add additional coconut milk to help
with the mixing process. Can also use vegetable or chicken stock if the cauliflower is too thick. Serve instead of potatoes! Delicious!
