I used ground turkey and pork sausage (1/2lb each), and I couldn't find cream of asparagus so I used cream of broccoli.
In general: I'm not sure how well this recipe hangs out together. The strong vegetable flavors don't really work with the meatballs, and I could not get my rice to get more than half cooked. I think the recipe would be improved by cooking the rice separately and just using the oven to heat the whole thing, but then I'm not sure if the raw vegetables would cook if you used a shorter time span.
I think it could work, but it would require pretty serious revision.
1 pound ground beef
1/2 cup rolled oats
1-1/2 teaspoons salt, divided
1/2 teaspoon pepper
1/2 teaspoon celery salt
1 teaspoon dried parsley flakes
2 cans (10-3/4 ounces each) condensed cream of asparagus soup, undiluted
2 cups water
1 cup uncooked rice
1-1/2 cups sliced celery
1 large onion, chopped
1 can (4 ounces) mushroom stems and pieces, drained
