Meringue Nests with Lemon Curd

Makes 6 Servings.

I made this for the dessert of an egg-themed dinner party on 4/9/11. It was tasty, though I had difficulty forming my meringue into 'nests', so it wasn't so pretty.

Ingredients: 

Meringues
• 2 large egg whites (reserve the yolks for the curd)
• ¼ cup plus 1 tablespoon granulated sugar
• ⅔ cup confectioners’ sugar, sifted
Lemon Curd
• 6 tablespoons unsalted butter, cut into cubes
• ½ cup granulated sugar
• 1 tablespoon fresh lemon zest
• ¼ cup freshly squeezed lemon juice
• 2 large egg yolks
• ¼ teaspoon salt
• 1 teaspoon pure vanilla extract
• Vanilla ice cream (optional)
• Sliced strawberries (optional)
