Mexican Chopped Salad with Honey Lime Dressing

Ingredients: 

2 1/2 cups chopped romaine lettuce
1 can (15.5 ounces) black beans, rinsed & drained
3/4 cup chopped seeded tomatoe
3/4 cup peeled jicama
3/4 cup fresh kernel corn, uncooked
3/4 cup thinely sliced radishes
1/2 an avacado
1/2 red bell pepper
1/4 cup crumbled Cojita cheese

Honey lime dressing:
1 1/4 cup fresh lime juice
1/4 cup olive oil
2 tablespoons honey
2 tablespoones finely chopped fresh cilantro
1 garlic clove, minced
1 teaspoon chopped jalapeño pepper


Toss all ingrediants in a large bowl.  In a sepate bowl, mix dressing ingredients.  Pour dressing over mixture and toss again.  Season with salt and pepper to taste.
