Mexican Green Rice with Spinach

Ingredients: 

1 cup diced onion
2 tablespoons minced jalpeno chile
2 large garlic cloves minced
1/4 cup vegetable broth
q cup long grain basmati rice
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon black pepper
2 cups chopped fresh spinach
1/4 cup chopped cilantro


Directions

  1. in medium saucepan, combine onion, jalepeno, garlic, and vegetable broth.
  2. Bring to a simmer, covered, over moderate heat and simmer until veggies are softened (about 5 minutes)
  3. Add rice, cumin, salt, pepper, and 1-1/2 cups water
  4. Bring to a boil over high heat
  5. cover and reduce heat to lowest setting
  6. cook 15 minutes
  7. add spinache and stir it in gently with a fork
  8. cover and cook until rice is tender and all liquid has been absorbed, about 5 more minutes.
  9. Remove from heat. Stir in cilantro gently with a fork.
