2 tbsp oil
2 3/4 cups chicken broth
1 onion, finely chopped
1 green bell pepper, finely chopped
2 fresh jalepeno peppers, chopped
2 cubes chicken boullion
2 tomatoes, seeded and chopped
1 tsp ground cumin
3/4 cup fresh cilantro, chopped
2 cloves garlic, chopped
Salt and pepper to taste
In a medium saucepan, cook rice in oil over medium heat for about 3 minutes.
Pour in chicken broth and bring to a boil.
Stir in onion, green pepperm jalepeno pepper and tomato.
Add boullion cubes, salt, pepper, cumin, cilantro and garlic.
Bring to a boil, cover and reduce heat to low.
Cook for 20 minutes.
