MEXICAN SUSHI RECIPE – GIVE A TRY TO IT!

Ingredients: 

Low-fat cream cheese —- 3 ounces, softened
Chipotle in adobo —– 1 1/2 tablespoons, seeded and finely chopped
Plain flour tortilla —- 1 large
Tomato-flavored tortilla —- 1 large
Spinach-flavored tortilla —- 1 large
Low-fat refried black beans —– 3/4 cup
Pico de gallo salsa —- 6 tablespoons
Avocados —– 1 1/2, peeled, pitted and diced
Cilantro leaves —– 3/4 cup, chopped
Salt and ground pepper to taste


 
  1. Combine cream cheese, chipotle, salt and pepper in a deep bowl.
  2. Heat tortillas in microwave or oven to soften.
  3. Spread each tortilla on a clean surface or plain dish and add 2 Tbsp cream mixture, 1/4 cup black beans and 2 Tbsp. Salsa over each.
  4. Sprinkle one-third of the avocado and cilantro over each tortilla.
  5. Roll up tortillas tightly. Wrap them in plastic wraps and then refrigerate the rolls for at least 1 hour.
  6. Right before serving, unwrap the rolls and trim ends. Cut each roll into 6 pieces and top them with yummy salsa.
