Mexican Wrap

Good with any vegetables you have.

Very messy meal: Do no eat on first date.

Ingredients: 

1can Watties Mexican Tomatoes
1can Home Brand Mexican Beans
1can Red Kidney Beans
2 medium sized Onions
2-4 Garlic Cloves
3+ slices of Jalepeno
Cumin

Salad:
2 Tomatoes
1/3 Cucumber
1 Avocado
1/4 Red Onion
2-4 Eggs
5+ Slices Jalepeno
1 Large Carrot
1/2 Cup Cheese
Salad Leaves

Tortillas:
Flour
Water

Sauces:
Honey Mustard dressing
Sweet Chilli sauce


Mexican Bean Mix
  1. Dice the onions. Fry in a small amount of oil with the crushed garlic and diced jalepenos until cooked.
  2. When white, add ~1tsp of cumin.
  3. Add the cans of tomatoes and beans. Simmer.
  4. Serve in a bowl.

Tortillas

  1. Mix flour and water together to form enough dough for four tortillas.
  2. Knead until well mixed.
  3. Roll into flat tortillas, dinner plate sized.
  4. Fry on a non stick frying pan. Can be done with very little oil.

Salad Prep

  1. Dice the tomatoes, cucumber, red onion, and jalepenos.
  2. Grate the carrot and cheese.
  3. Fry the eggs - try to have the white elongated rather than round, so that it fits in the tortillas.
  4. Slice the cucumber
  5. Put all of the salad ingredients excluding the salad leaves and tomato onto a plate, separated.
  6. Put the tomato and salad leaves in separate bowls.

When all is ready, put the plate and bowls of salad and the bowl of bean mix onto the table.

Lay the dinner plates with the tortillas already on them.

Put whatever you want in (All is best) and enjoy!
