Ingredients: 

Brine
1 cup Kosher Salt
1/2 cup Sugar
1 head Garlic (halved crosswise)
2 sprigs fresh Rosemary
1 tablespoon Black Peppercorns
1 tablespoon Coriander Seeds
1 Bay Leaf (fresh or dried)
10 pound bone-in fresh Ham (shank end)
Glaze
1 gallon Orange Juice (not from concentrate)
1/2 cup fresh Lime Juice
1 Habanero Chile (with a slit cut in 1 side)
1 cup packed Light Brown Sugar
2 cups BBQ Sauce
