MIDDLE EASTERN FREEKAH AND MEATBALL STEW

Notes: 

Unusual and exciting grains such as freekah (green wheat) are becoming very popular. It has a chewy texture and light smoky taste. Middle Eastern cuisine got a boost of popularity from Yotam Ottolenghi and Sami Tamimi and their cookbook Jerusalem, and this recipe was inspired by a soup in that book. Freekah is available at Middle Eastern stores and was even spotted at Costco. Lentils or rice can be used instead freekah for a gluten-free version.

Ingredients: 

* 1 lb ground beef
– 1/2 cup quick cooking oats
– 1 egg
– 1 small onion, finely chopped
– 2 cloves garlic, minced
– 1 tbsp chopped fresh parsley
– 1 tsp kosher salt
* 1/2 tsp ground allspice
– 1/4 tsp ground cinnamon
– 1/4 tsp freshly ground black pepper
– 1 tbsp extra virgin olive oil
Freekah:
* 2 tbsp extra virgin olive oil
– 1 large onion, chopped
– 2 cloves garlic, finely chopped
– 2 each carrots and celery, chopped
– 1 tbsp ground coriander (seed)
* 2 tsp ground cumin
– 1/4 tsp each hot red chili flakes, ground allspice and ground cinnamon
– 1 28 oz/796 mL tin plum tomatoes, with juices
– 1 cup cracked freekah, rinsed well
– 5 cups beef stock or more
– kosher salt and freshly ground black pepper to taste
– large handful baby spinach or baby kale
– lemon cut into wedges
– 1/2 cup chopped fresh cilantro
