Mince pies

Notes: 

Makes 12 deep filled. Use a muffin tin

Ingredients: 

1 jar mincemeat (about 4-500g)
a splash of brandy, sherry or orange juice
1 apple, finely chopped
3 balls of stem ginger, finely chopped
100 g dried cranberries
75 g dried apricots, finely chopped
a pinch or two of mixed spice
zest 1 lemon
little icing sugar, for dusting
For the pastry
375g plain flour
250g unsalted butter, softened
125g caster sugar, plus extra for sprinkling
1 medium egg, plus 1 beaten egg for glazing
