Moist Banana Caramel Coconut Muffins

Ingredients: 

½ cup of moist coconut flakes (I used McKenzie’s brands)

125g coconut oil- 100grams for the banana caramel and 25grams to the wet mix.

¾ cup of honey or agave syrup

2-3 ripe bananas chopped

3 eggs

1 ½ cups of wholemeal unbleached self raising flour or Quinoa flour- please note if you use quinoa flour you will need a baking powder.

2 tablespoons of oat milk

1 teaspoon of organic vanilla essence

½ teaspoon of cinnamon
