Mom's beef stroganoff (My vegetarian version)

Ingredients: 

1.5 lbs seitan cubes
2 tbsp butter
1 1/2 cups vegetable bouillon
2 tbsp ketchup
1 small garlic clove, chopped
1 teaspoon salt
8 oz sliced mushrooms
1 cup onions, chopped
3 tbsp flour
1 cup sour cream
3-4 cups hot cooked noodles
Poppy seeds and butter


  1. Cook and stir seitan in 2 tbsp butter until browned
  2. Preserve 1/3 cup bouillion. Stir in remaining bouillion, ketchup, garlic, and salt into pan
  3. Heat to boiling. Reduce heat, cover, and simmer 1.5 hours.
  4. Stir in mushrooms & onion; simmer for 5 minutes
  5. Shake reserved bouillion and the flour in a sealed container and stir slowly into seitan. Heat to boiling, stirring constantly.
  6. Boil and stir for 1 minute.
  7. Reduce heat; stir in sour cream and heat through.

Toss noodles with 1 tbsp butter and poppy seeds. Serve "beef" over noodles.
