Mum's Christmas Cake

Ingredients: 

1 kg mixed fruit
1 c water
250 gms butter
1 tbsp vinegar
½ tsp (each) nutmeg, ginger and mixed spice

1 tsp baking soda
1 tin condensed milk
vanilla essence

2 c flour
1 tsp baking powder
pinch of salt


Bring the first group of ingredients to the boil then take off the heat and cool to room temperature. Stir in second group of ingredients.

Sift last set of ingredients and fold in gently.

Bake for 1 1/2 - 2 hours at 160

NB I like to line the cake tin with at least 4 layers of baking paper. Place baking paper on top to avoid burning of fruit
