Mushroom Stifado Stew

Ingredients: 

1 cup of olive oil
3/4 pound of onions, sliced in thin rings
2 cloves of garlic, sliced
1 1/2 pounds of fresh mushrooms, cleaned, cut in half
1/2 cup of red wine vinegar
1 1/4 cups of pulped fresh ripe tomatoes
1 stick of cinnamon
1 bay leaf
1 teaspoon of sea salt
1/4 teaspoon of coarsely grated black pepper
