Nancy's Passover matzo pudding

Another pudding variation because there's no such thing as too many desserts! The nuts add a nice texture and the tart apples balance the sweetness.

3 matzo crackers

6 large eggs

1/2 teaspoon salt

1/2 cup raisins

1/2 cup walnuts or pecans, chopped

4 tart apples, cored, peeled and cut into small dice

Grated rind of 1 orange
