Nectarine and Coconut Crumble

Ingredients: 

6 nectarines, not peeled, pitted and sliced
3 onces white sugar, plu 2 tablespoons extra
1 teaspoon vanilla
4 ounces flour
2 ounces cold butter, chopped
1 1/2 ounce desiccated coconut
1 1/2 ounces shredded almonds


  1. Preheat the oven to 350 degress F.
  2. Put the sliced nectarines , sugar, and vanilla into a shallow 11-inch round ovenproof dish and toss well to coat.
  3. Put the extra 2 tablespoons suagr and flour in a separate bowl and mix to combine.
  4. Add the butter and, using your fingertips , rub into the flour until it resembles crumbs.
  5. Add the coconut and almonds. Stir.
  6. Spread the crumbs evenly on top of the necatrines.
  7. Transfer to the preheated oven and bake for 25 to 30 minutes or until golden and crisp.
