Oatmeal Butterscotch cookies

Ingredients: 

3/4 c butter, softened
3/4 c granulated suger
3/4 c packed light brown suger
2 eggs
1 t vanilla extract
1 1/4 c all purpose flour
1 t baking soda
1/2 t ground cinnamon
1/2 t salt
3 c quick cooking or regular oats, uncooked
1 3/4 c butterscotch chips


  1. Heat oven to 375.
  2. Beat butter and sugars until well blended.
  3. Add eggs and vanilla, beat well.
  4. Combine flour, soda, cinnamon and salt. Gradually add to butter mixture, beating until well blended.
  5. Stir in oats and chips.
  6. Drop by heaping teaspoons onto ungrased cookie sheet.
  7. Bake 8-10 min, until golden brown. Remove from sheet to wire rack to cool.
  8. Makes about 4 doz
