Grated zest of 1 lemon
1/4 teaspoon salt, plus more if needed
1 teaspoon Dijon mustard
3 tablespoons fresh squeezed lemon juice
1/2 cup olive oil (extra-virgin or high quality)
Fresh ground pepper
