ONE PAN CHICKEN POT PIE

Ingredients: 

2 Tbsp canola or olive oil, divided
2 lbs boneless, skinless chicken breasts, or thighs (about 4 breasts, 8 thighs) cut in to ½” cubes
1 tsp salt (or to taste)
1 tsp pepper (or to taste)
1 onion, chopped (about 1 cup)
2 cloves garlic, minced
3 stalks celery, trimmed and chopped
2 cups frozen peas and carrots
4 Tbsp butter
4 Tbsp flour
1 ½ cups chicken broth
½ cup whipping cream (or milk)
1 Tbsp poultry seasoning
1 large frozen prepared pie crust (thawed), or homemade rolled out
1 egg, beaten
