One Pot Cheesy Chicken Lemon Pasta


1 lb. Chicken breast, cut into 1 inch pieces
salt and pepper
2 Tbsp. olive oil
2/3 C. yellow onion, chopped
1 Tbsp. minced garlic (I used 3 cloves)
2 1/2 C. uncooked pasta
1 3/4 C. chicken broth (which equals one 14 oz. can)
3 Tbsp. freshly squeezed lemon juice
3 C. spinach
4 oz. cream cheese, cut up into little pieces
2/3 C. shredded mozzarella cheese
1/4 C. grated Parmesan cheese
zest from one lemon
Cherry tomatoes
salt and pepper
