Ingredients
1 lb of ground Turkey or Hamburger meat
1 envelope of low sodium Taco seasoning
1 can of drained & rinsed Pinto Beans
a handful of fresh cilantro + some for garnish
1/2-3/4 cup of your favorite Salsa + some for garnish
1 cup of Shredded Cheddar or Mexican Mix Cheese + for garnish
1 package of Jiffy Cornbread Mix (Mix per package directions)
Sour Cream for garnish
Instructions
Preheat oven to 400*.
In a large cast iron skillet cooked your hamburger meat on med/high heat and drain.
Add your envelope of Taco seasoning and add water per directions and mix well.
Lower your heat on your skillet.
Spread your meat evenly across the bottom of the skillet.
Add your rinsed Pinto Beans and spread evenly over the meat.
Add your favorite Salsa.
Sprinkle a handful of fresh cilantro over the entire skillet.
And add your cheese as well.
In a separate bowl, mix together your boxed cornbread mix (per package directions) and spread the cornbread mixture over your skillet.
Place entire skillet in the oven per package directions of the cornbread. Mine was perfectly cooked at 22 minutes, but some ovens may vary.
Garnish with your favorite salsa, sour cream, cilantro, cheese and enjoy!!!
