Orzo and Pesto Bake

It really showcases the fresh tastes of summer, with yellow pepper, onion, and all the garlicky goodness of fresh pesto. If you don't have homemade pesto, substitute the best store-bought version you can find. This dish is also rather healthier than many pasta casseroles, with just enough cheese to make it taste rich, but not so much that it overwhelms the clear taste of the pesto. • Serves 6

1 pound orzo
2 tablespoons olive oil
2 cloves garlic, minced
1 yellow bell pepper, cored and diced
1 small onion, minced
⅔ cup fresh basil pesto
1 cup shredded mozzarella cheese
Salt and freshly ground black pepper
½ cup grated Parmesan cheese
