Orzo with sausage and artichokes

Ingredients: 

1 ½ c orzo
2 ½ c chicken or vegetable broth
3 sausages
2 tbsp butter
asparagus, cut into one inch pieces
¼ onion, diced
1 can artichoke hearts, drained
Italian seasoning
garlic
salt
pepper
parmesan cheese
olive oil


Heat large pot over med-high heat. Melt butter. Add orzo. Heat for a few minutes. Add asparagus, chicken broth, salt, pepper, onions, garlic, and Italian seasoning. Cook for 15-20 minutes, until all the liquid is gone. Add the artichokes the last 5 minutes.

While orzo mixture is cooking, cook the sausage in frying pan with a little olive oil. Slice and add to orzo before serving.

Top with grated parmesan.
