Oven-Braised Pork Ribs

Notes: 

These ribs require a dry rub the day before, and after that, they bake for three hours. This means you need to plan ahead. That's okay—they're worth it.
This dish works well at an elegant zombie dinner party. I recommend chopping the ribs into 6 pieces with a clean ax for maximum effect.

Ingredients: 

3 pounds baby back ribs (about 2 full racks)
1 cup brown sugar
3 tablespoons chili powder
3 tablespoons garlic salt
1 teaspoon dry mustard
1 teaspoon ground thyme
1/2 teaspoon ground allspice
1/2 cup granulated sugar
1/2 cup water
1/2 cup orange juice
Juice of two limes
1/3 cup honey
1/3 cup ketchup
1 tablespoon Worcestershire sauce
1 teaspoon instant espresso powder
